Description
A Convalmore of a 30 year old chosen by House of Whisky, distilled in 1975, from cask 2572, bottled at 40%, one of 269 bottles. Convalmore was a Speyside distillery at Dufftown, closed in 1985 and rarely bottled as a single malt. Diageo retains the rights to the Convalmore name, and the few official bottlings come from its vaults.
This was worked through the pot stills for a waxy, malty make, to build a robust, fruity Speyside character. Decades in ex-Bourbon oak rounded the firm spirit, honey over a waxy malt. In its ethereal years the malt is waxy and oxidative, faded esters and a touch of sotolon (maple, spice). Years in oak round the spirit, the fruit deepening to dried fruit and honey. Most Convalmore went quietly into blends, a little surviving as single malt. The clean spirit shows the cask clearly, vanilla and honey over a malty wax. No new spirit has followed it since the stills fell quiet in 1985.
At an approachable 40% it is soft and balanced. Malt, dried fruit and a sweet spice, with a soft vanilla from the oak. Soft orchard fruit and a waxy honey sit behind the cask. The close is firm, fruit over a waxy malt. This is a single malt from a silent Dufftown distillery.
