Description
Comtesse de Cherisey is a sixth generation Burgundy domaine in Puligny-Montrachet, owned by the family since 1811 and run by Helene and Laurent Martelet, who farm the vineyards organically. This wine comes from the Premier Cru Les Chalumeaux, one of the commune's fine limestone sites on the Cote d'Or. Puligny sits on Jurassic limestone and marl, soils that give white Burgundy its mineral tension and the capacity to age. The wine is fermented and aged for twelve months in oak barrels. Barrel ageing allows a slow exchange of oxygen that builds texture and complexity, while malolactic fermentation converts sharp malic acid into softer lactic acid, adding a rounder, creamier mouthfeel. Time on the lees in barrel lends a toasty, nutty depth. It shows a pale gold colour, with white peach, lemon and hazelnut on the nose over toasted bread, a touch of vanilla and a honeyed note. The palate is rich yet precise, with a creamy texture set against firm limestone acidity and a long, mineral finish. Serve at 11 to 13 degrees in a large white wine glass. It suits richer fish, poultry and nutty cheeses.
