Description
Comtesse de Cherisey has worked the hamlet of Blagny in the Cote de Beaune since 1811, and this Meursault is drawn from the Bois de Blagny, a higher, cooler pocket of the appellation. Elevation is the key to its character: in a warming climate the greater height keeps the nights cold and preserves the acidity and vitality that define fine white Burgundy. The soils are limestone and marl, which lend Chardonnay its mineral cut and give the wine structure beneath the fruit. Farmed organically, it is aged for 12 months in oak barrels, where barrel fermentation, lees contact and the usual malolactic conversion of white Burgundy build a creamy, subtly oaked texture without weighing down the freshness. The colour is a bright straw gold, and the nose is expressive, with lemon, green apple, white peach and toasted hazelnut. The palate is textured and creamy but kept lively by a clean line of acidity, closing on a long, savoury, nutty finish. Serve at 12 to 13 degrees in a large glass.

Additional information
Its balance of richness and freshness suits sole or turbot in butter, scallops and roast chicken in a cream sauce. Lobster is a fine treat with a wine of this weight. The nutty, toasted character also matches aged Comte and Gruyere.
