Description
Comte Lafond is a Sauvignon Blanc from Domaine de Ladoucette, an estate in AOC Sancerre in France's Loire Valley whose roots reach back to the 18th century. Sancerre's hillside vineyards sit on limestone, clay-limestone and flinty silex soils above the river, and the cool continental climate with wide day-to-night temperature shifts slows ripening so the grapes keep their high natural acidity and aromatic definition. The wine is aged for six months on its fine lees, part in stainless steel and part in barrel. Lees contact adds a light creamy weight and texture without masking the fruit, while the neutral old wood rounds the wine rather than adding oak flavour. The colour is pale straw with a green tint. The nose is precise, with lemon, green apple, elderflower and white flowers over a wet-stone minerality typical of the flinty soils. On the palate it is dry and taut, the citrus fruit carried by fresh acidity to a saline, mineral finish. Serve at 8 to 10 degrees in a white wine glass.

Additional information
A natural match for raw oysters, dressed crab and grilled white fish such as sole or sea bass. The bright acidity and mineral edge also cut fresh goat cheese and green salads with a sharp vinaigrette. It works equally well as an aperitif before a seafood lunch.
