A four year old charanda from Michoacan, Mexico, made from cane juice and distilled on pot and column stills, earthy and spicy with green olive, anise, cardamom and clove over a barrel edge, a savoury, unusual aged cane spirit.
Description
Charanda is Mexico's protected cane spirit from the highlands of Michoacan, and this Sol Tarasco is made by Comercializadora Pame from fresh pressed sugarcane juice, putting it in the agricole family rather than the molasses mainstream. It is distilled on a combination of pot and column stills and aged four years in ex bourbon oak, an uncommon profile that rewards the curious.
The character is firmly savoury. The nose is earthy and spicy with an olive note, the palate stays earthy and spicy with that briny olive edge, and the finish leans into barrel, anise, cardamom and clove. A faint smokiness runs through it, giving it an almost agave adjacent feel that sets it apart from Caribbean rum. Unsweetened and a touch challenging, this is a contemplative, vegetal spirit for drinkers who enjoy earthy, spice driven cane rums and want to explore a regional style well off the beaten path.
