Gutiérrez Colosía draws this dry Oloroso from a solera over 50 years old at its riverside cellars in El Puerto de Santa María. Oxidatively aged Palomino, it is robust and dry, with walnut, leather and oak.
Description
Colosía Solera Familiar Oloroso is made by Bodegas Gutiérrez Colosía, founded in 1838 on the estuary of the Guadalete river in El Puerto de Santa María, on the bay of Cádiz. The waterside location, with its dry easterly winds and Atlantic humidity, allows the cellars to self-regulate moisture and supports a long, steady ageing. The wine is pure Palomino Fino from the albariza chalk soils, drawn from a solera over 50 years old. An Oloroso is fortified from the start above the level at which flor yeast can survive, so it ages oxidatively, in direct contact with air through the cask for the whole of its life. That long exposure converts alcohol to acetaldehyde, concentrates the wine through evaporation and builds its mahogany colour and full body. It is deep brown with a robust, bone-dry palate of walnut, leather, dried fig and oak over a thread of tobacco, finishing long and saline. Serve at around 14 degrees in a copita, with red meat, game, mushroom dishes or aged hard cheese.
