Gutiérrez Colosía bottles this Fino En Rama with little filtering, drawing it straight from a three-year solera. Pure Palomino aged under flor, it is bone dry and saline, with almond, fresh dough and a marked sea-salt tang.
Description
Colosía Fino En Rama is made by Bodegas Gutiérrez Colosía, a house from 1838 set at the mouth of the Guadalete river in El Puerto de Santa María, on the bay of Cádiz. The waterside cellars, balanced between the dry easterly wind and the humid Atlantic, keep the veil of flor yeast active and even. The wine is pure Palomino Fino from the albariza chalk soils, fortified to 15 percent so a thick cap of flor forms across the surface of the cask. This living veil shields the wine from oxygen and consumes its alcohol and glycerine, giving the bone-dry, saline and bready character of a biological Fino. After around three years of fractional ageing in solera the wine is bottled en rama, drawn almost straight from the cask with minimal filtering or fining, so it keeps more of the texture and aroma the flor gives it. It is pale gold with a sharp, clean palate of almond, fresh dough and green apple over a marked saline tang and a faint yeasty bitterness. Serve well chilled at around 8 degrees in a copita, as an aperitif or with seafood.
