Description
A Clynelish of a 12 year old chosen by The Whisky Exchange, distilled in 2011, from cask 800297, bottled at 56.4%, one of 175 bottles. Clynelish is the waxy, maritime Highland single malt at the heart of Johnnie Walker Gold. Clynelish is unpeated, its character built on texture, citrus and coast rather than smoke.
Made in copper stills for a coastal, waxy make, to build a waxy, coastal, citrussy spirit. It rested in ex-Bourbon oak, the wood adding a light honeyed vanilla. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper citrus over the wax. Vanillin and oak lactones from the wood lend vanilla and coconut over the wax. Long ageing turns the fresh lemon towards candied orange, beeswax and tropical fruit. The famous wax is said to come from the build up in the distillery's feints receivers. Water comes from the Clynemilton Burn, the spirit drawn off three wash and three spirit stills.
At cask strength 56.4% it is full bodied. Candle wax, tangerine and a maritime lift, with a soft vanilla from the oak. Soft citrus and a honeyed wax sit behind the cask. Citrus, wax and a faint brine see out the finish. This is the waxy heart of Johnnie Walker Gold.
