Description
Clos Lentiscus is a family winery in Sant Pere de Ribes, in the heart of the Garraf natural park in Penedès, aiming to make wine as it was made in the past. The vines are farmed without pesticides or herbicides, following the moon for planting, pruning and harvest, and this Perill Blanc is a natural, sulphite conscious Xarel·lo. The Garraf is a rugged coastal massif of limestone, and its poor, calcareous soils and dry Mediterranean climate, tempered by sea breezes, give Xarel·lo its firm acidity, salinity and structure. The wine spends six months in amphora. Clay vessels allow a slow, gentle exchange of oxygen through their porous walls, which rounds the texture and settles the wine without adding any wood character, so the fruit and mineral core stay in focus, while time on the fine lees lends a silky weight. It pours pale lemon. The nose gives green apple, lemon and citrus peel with white flowers and a saline, herbal note, and the palate is fresh and crisp yet surprisingly full, closing dry and mineral. Serve it at around 9 to 11 degrees.

The salinity and crisp acidity make it a natural with raw and grilled shellfish, from oysters to prawns. It also suits fresh white fish, green salads and vegetable dishes, and its texture lets it double as a characterful aperitif.
