Description
Clos du Rouge Gorge is the small Roussillon estate of Cyril Fhal, who since 2002 has farmed six hectares of old vines biodynamically, ferments only with native yeasts and works with minimal intervention to let grape and terroir speak. Femme Soleil is a white blend of Grenache Gris and Macabeu from vines aged between 50 and 100 years, grown in the sun-baked hills of the Côtes Catalanes. Despite the warm south the wine sits at just 11.5 per cent, picked to hold freshness, and old vines on poor soils give concentration at modest ripeness. It is raised for six months in a mix of barrel and stainless steel, the neutral vessels preserving fruit while brief oak and lees contact add a little texture without obvious wood flavour. Grenache Gris brings a saline, citrus-mineral character and Macabeu a floral, appley freshness. The colour is pale gold. The nose shows citrus peel, white peach and pear with a herbal, thyme-like note. The palate is dry, textured and mineral, low in alcohol yet long, closing on a salty, faintly bitter-almond finish. Serve at 10 to 12 degrees.

Additional information
Serve with grilled white fish, prawns and other shellfish, where the saline freshness lifts the plate. The herbal, mineral character also suits summer salads and fresh goat cheese.
