Description
Clos du Rouge Gorge is the small estate of Cyril Fhal in the Côtes Catalanes of Roussillon, six hectares of old vines up to a hundred years old, farmed biodynamically and vinified with minimal intervention so the grape and the terroir carry the wine. This white is made from Macabeo with a little white Grenache, both classic southern French varieties. The warm Mediterranean climate of Roussillon ripens the fruit fully, while the very low yields from these old vines concentrate flavour and hold structure. The wine is aged eight months in 500-litre French oak barrels, a larger format that gives a gentle oxygen exchange and lees contact to build texture, without the wood standing out the way a small barrel would. The natural, low-sulphur handling keeps the flavours direct. The colour is bright gold. The nose shows white peach, pear and citrus peel over white flowers, thyme and a light waxy note. The palate is dry and textured, broad but fresh, with almond and a savoury, mineral finish. Serve at 10 to 12 degrees in a white wine glass.

Suits grilled white fish, roast chicken and roasted squash. The texture and herbal, waxy depth also carry hard nutty cheeses and grilled vegetables.
