Description
Clos Cibonne is a centuries-old estate at Le Pradet in the Côtes de Provence, close to the Mediterranean, and is the guardian of Tibouren, a delicate local grape it has championed since André Roux revived the vineyards in the 1930s. This Cru Classé red blends Tibouren with Grenache and Syrah and is farmed organically. The coastal site brings sea breezes and warm days, giving ripe but light-bodied fruit, while the pale, stony soils keep the wine fresh and saline. Clos Cibonne follows an unusual local tradition of ageing under a thin veil of yeast in large old chestnut and oak foudres, a mildly oxidative method that adds a savoury, slightly nutty depth while keeping the colour light. The result is a bright, pale red, almost between rosé and red in weight, with wild strawberry, red cherry and rose on the nose over dried Provençal herbs and a salty tang. The palate is light and fresh, with soft tannin, gentle grip and a herbal, saline finish. Serve lightly chilled at 13 to 15 degrees, in a standard glass. It pairs with roast chicken, grilled tuna and Provençal vegetable dishes.
