Description
Clement Single Batch Chauffe Extreme is a Martinique rhum agricole distilled from fresh pressed sugar cane juice at Distillerie du Simon, where Clement's spirit is now made. The Chauffe Extreme name points to its defining feature: barrels given a deep, aggressive char that pushes the rum toward roasted, smoky territory well beyond a standard ex bourbon vieux. At five years and 46.9% it is dry and unsweetened, an affordable way into a more characterful side of the house.
Distilled low on a creole column to keep the cane congeners intact, then matured in heavily charred ex bourbon oak, it shows toasted wood, hazelnut, cocoa and a mineral cane edge rather than vanilla softness, with peppery spice and tobacco on a long finish. The bourbon ageing lends grilled pineapple and dried fruit hints, but the wood leads throughout. A good fit for bourbon drinkers curious about agricole and happy with a roasted, savoury profile.
