A 15 year old single cask agricole from Clement’s Rare Cask Collection, dry and cask strength with woody, dried-fruit and chocolate depth over grassy cane and light smoke, fresh-juice distilled at 56.2%.
Description
Clement is a 300-year Martinique estate, and its Rare Cask Collection sets aside individual barrels for the most patient drinkers. This Robert Peronet bottling draws on a 2002 vintage, more than fifteen years in oak, pressed from fresh sugar-cane juice and bottled unsweetened in the AOC tradition.
Column-distilled and matured at cask strength in ex-bourbon oak, it shows the drier, spice-forward direction that long-aged agricole takes: woody with chocolate, raisin and a nutty edge on the nose, then dried fruit and cocoa over a grassy cane core and a wisp of smoke on the palate. The finish runs long, dry and woody with more dried fruit and chocolate. At 56.2% the power is well integrated and warming, a balanced, serious cask for experienced palates rather than newcomers.
