A single cask Martinique cane juice agricole rested in port wood, layering marmalade orange, chocolate and warm baking spice over a woody, grassy core, unsweetened and lively at a full cask strength 55.3%.
Description
Another from Clement's Cask Finish Collection, this 2018 single cask is finished in port wood, the wine cask leaving a clear stamp of orange and dark fruit on the estate's cane juice rum. It carries just under five years of age and bottles unsweetened at 55.3%.
Distilled from fresh-pressed sugar cane juice on the creole column at Le Francois, then given its port finish, it noses on wood, spice, roasted notes and orange. The palate follows with orange, chocolate and a grassy agricole edge, before a woody, spiced and nutty close. The port influence is obvious but stays on the savoury, marmalade side rather than tipping into sweetness, helped by the dry AOC base. A good showcase of how a wine finish can recolour Martinique agricole while leaving its backbone intact, rewarding a slow neat pour or a few drops of water.
