A cask-strength single cask of Clement agricole, fresh cane juice off a creole column and three years in ex-bourbon, grassy and toasted with vanilla, citrus and a nutty, chocolate finish, dry and forceful at 56.6%.
Description
Clement, the GBH-owned three hundred year old Martinique estate distilled at Distillerie du Simon, released this 2015 in its Cask Collection as a single cask bottled at full strength. It is made from fresh-pressed sugarcane juice rather than molasses, drawn from the distillery's creole column.
The creole still runs low to keep the green, grassy congeners in the spirit, and even after three years in ex-bourbon oak that cane character holds: toasted oak and flowers on the nose, vanilla, grass, citrus and sugarcane on the palate, and a nutty finish of milk chocolate and peanut. There is no added sugar under AOC rules. At 56.6% it is undeniably forceful, and the alcohol can dominate if taken neat without care, so a few drops of water help open the earthy, grassy, chocolate notes. A characterful single cask for those who like their agricole at full power.
