    Claudio Cipressi farms a 16-hectare estate of native vines at San Felice del Molise, in the province of Campobasso in southern Italy, best known locally for the red grape Tintilia but here working the white Falanghina in the IGP Terre degli Osci. Falanghina is a Campanian and Molise variety that keeps good acidity and gives fresh citrus and orchard fruit with a floral edge. Farming is organic, and the wine is made entirely in stainless steel, which preserves the primary fruit and the grape's natural freshness without any oak influence. The colour is pale straw. The nose is fresh and direct, with green apple, citrus and white peach over a light floral note. The palate is dry and crisp, the fruit carried on brisk acidity through a clean, slightly mineral finish. Serve well chilled at 8 to 10 degrees in a white glass. It suits shellfish, grilled white fish and vegetable dishes, and has the freshness for lighter poultry.
