Description
Clase Azul Plata is a 100% Blue Weber agave blanco produced at Productos Finos de Agave in Jesús María, in the Los Altos highlands of Jalisco. The brand is built around its hand painted ceramic decanter, which is as much the point as the liquid, and the highland setting tends toward the sweeter, fruitier, rounder side of the agave spectrum.
The agave is cooked slowly over 72 hours in traditional brick ovens, then fermented with a yeast developed in house and distilled. Plata means unaged, and the natural colour the slow cook imparts is filtered out before bottling so the spirit reaches the clear decanter bright. The profile is mild and herbal on the nose with citrus, then full and gently fruity on the palate, leaning markedly sweet. Bottled at 40%, it is a soft, accessible reading of highland agave rather than a rustic one.
