Description
Clase Azul Mezcal San Luis Potosi is a joven mezcal made from Salmiana (Agave salmiana), the highland agave known locally as the green or verde agave, which can take up to twenty five years to mature. It is produced in the small village of Estacion Ipina in San Luis Potosi at more than 1,800 metres, where Salmiana grows wild and native, and is led by master distiller Viridiana Tinoco.
Salmiana gives a leaner, drier, more vegetal mezcal than Espadin, and that grassy, mineral character defines this bottling. The nose carries cooked agave, caramel, green chilli, sweet fruit and fresh cut grass with a subtle wildflower lift. The palate is herbal in feel, with caramel, lime peel and clove leading to a mineral, spicy finish. Bottled at 43%, it shows the highland Salmiana style of central Mexico rather than the smokier Oaxacan profile.
