Description
Cims de Porrera is a distinctive Priorat project run by the Pérez Ovejero family within the cooperative cellar of the village of Porrera, built around paying growers a fair price for their fruit. This Vi de Vila white draws on old vineyards, mostly over seventy years of age, planted on rough terrain with slopes reaching sixty percent. The soil is llicorella, the fractured slate and quartzite that defines Priorat, forcing the roots deep in search of water and lending the wine its taut, stony minerality and low yields. The blend of Macabeo, Garnacha Blanca, Picapoll Blanc and Pedro Ximénez is aged for nine months in concrete vats rather than oak, a choice that preserves fruit purity and freshness while the fine lees add texture and breadth without any wood flavour. The colour is pale straw. The nose is fresh and mineral, with lemon, green apple and pear over white flowers and a dry, herbal edge. The palate is textured and saline, the old-vine concentration held in check by bright acidity and a long, stony, almond-tinged finish. Serve at 9 to 11 degrees.
