Description
Bodegas Chivite is one of the most established wineries in Navarra, and Las Fincas Rosado is a limited, numbered cuvee created with Juan Mari Arzak, conceived as a wine for the dining table. The blend is Garnacha Tinta with Tempranillo, two varieties well suited to Navarra's continental climate, where warm days and cool nights preserve freshness in the fruit. The grapes are pressed for a pale pink colour and fermented, then the wine is aged four months on its lees. During lees ageing the spent yeast cells slowly autolyse and release mannoproteins, which build texture and a fine savoury weight on the palate while keeping the wine dry and fresh. The colour is pale and bright. The nose is delicate, with red berries, cherry and white peach over a floral note. The palate is crisp and balanced, with citrus and red fruit and a saline, gastronomic finish that points it firmly at food. Serve well chilled at around 8 to 10 degrees.
