    An unpeated Chichibu single malt from Saitama, 6 Years Old, matured in ex-bourbon American oak, distilled in 2012. Fruit led, all vanilla, coconut and honey. The fast mountain maturation gives it depth beyond its years. Bottled at 60.6%, a run of 274 and released for Taiwan. A sought after Saitama release.

    Chichibu sits in a mountain basin in Saitama, northwest of Tokyo, where Ichiro Akuto fired the stills in 2008 under his Venture Whisky company. Chichibu loses roughly three to five per cent of each cask a year to evaporation, near double the Scottish rate, so a young whisky here carries the depth of a much older one. The make is double distilled in copper pot stills built by Forsyths, from mostly unpeated barley, and matured on site in dunnage warehouses.

    This is unpeated single malt, matured in ex-bourbon American oak. By 6 years the spirit and oak have started to integrate, rougher notes softening as esters build into orchard and tropical fruit. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. Underneath the wood, the make keeps its clean, fruity core, green apple and stone fruit with a light floral edge.

    This bottling was distilled in 2012, from cask 1691 and bottled in 2018. It is a run of 274 bottles, released for Taiwan. Each cask is bottled on its own terms, a snapshot of how a particular wood shaped the Saitama spirit. At 60.6% it drinks well neat, with water settling the oak.
