Chichibu distillery in Saitama has built its reputation on small-batch, single-cask releases bottled at natural strength, and the Thousand Crane Series represents that philosophy directed at the Taiwanese market. Founded in 2008 by Ichiro Akuto, grandson of the Hanyu distillery family, Chichibu draws on a fruit-forward new make and an unusually diverse maturation programme for a distillery of its size.
This 2012 vintage spent six years in an Ex-Bourbon barrel before bottling at 60.6% cask strength. The flavour profile shows fresh fruit prominently, the characteristic brightness of young Chichibu spirit meeting vanilla and soft wood tannin from the American oak. The combination of a warm, ripe new make and tight bourbon seasoning gives a lively, juice-forward character with the structure to carry the high ABV cleanly through to the finish.
