Chichibu distillery in Saitama released this 7 year old single cask under its The Single Cask label for the German market in 2018, distilled from the 2011 vintage by Venture Whisky and founder Ichiro Akuto. The bottling arrives at cask strength.
The maturation is a single Ex-Bourbon cask, and seven years in American oak has produced a characterful spirit. The noted flavour profile of cooked fruit, fresh fruit, honey and nutty tones reflects a cask that has taken the distillery's fruit-forward new make in a warmer, more rounded direction. The cooked fruit element adds a preserved, jammy quality alongside the brighter fresh fruit, while honey and nuts suggest well-integrated wood sweetness. At 59.7% the spirit is bold and well-defined, a composed mid-aged Chichibu from the Saitama distillery's prime period.
