Description
Chichibu distillery in Saitama, founded in 2008 by Ichiro Akuto, runs one of the most varied cask programmes in Japanese whisky, including a significant proportion of sherry wood maturation. The Single Cask release directed to Germany in 2018 demonstrates this versatility, drawing on a single Oloroso cask from the 2013 vintage.
Five years in an Oloroso sherry barrel gave the spirit a depth unusual for such a young whisky: dried fruit, chocolate and malt extract are the dominant notes, the sherry wood's richness working in harmony with the distillery's characteristically sweet, grain-forward new make. At 49.7%, the bottling is at the lower end of Chichibu cask-strength releases, making the sherried character approachable and persistent without the intensity of a higher-ABV expression. The finish is long, with cocoa and dried plum lingering alongside a soft wood tannin.
