Chichibu in Saitama, run by Venture Whisky and founded by Ichiro Akuto in 2008, has developed a global following through its single cask programme, and cask #3851 is part of that story. Distilled in 2014, it spent six years in Ex-Bourbon wood before being bottled in 2021 at 62.3% for the Australian market.
The Ex-Bourbon cask at six years delivers Chichibu's typical house character in concentrated form: fresh apple and pear sit alongside vanilla and light toasted grain, with the distillery's lively new make still providing the energy.
