The fast mountain maturation gives it depth beyond its years. Bottled at 57.4%, a run of 250 and bottled by La Maison du Whisky.

    Founded in 2008 by Ichiro Akuto, Chichibu has risen fast from a small mountain distillery to one of the most sought names in Japanese whisky. The make is double distilled in copper pot stills built by Forsyths, from mostly unpeated barley, and matured on site in dunnage warehouses. Water comes off the Arakawa river system, filtered through the surrounding mountains to a clean mineral balance that lets the fruit and oak show.

    This is unpeated single malt, matured in ex-bourbon American oak and finished in a stout beer cask. By 7 years the spirit and oak have started to integrate, rougher notes softening as esters build into orchard and tropical fruit. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut, while the cask adds roasted malt and a cocoa note. The spirit character stays fruit forward, apple and pear over a soft, malty body and a gentle spice.

    This bottling was distilled in 2011, from cask 4548 and bottled in 2018. It is a run of 250 bottles, released for France, bottled by La Maison du Whisky. From a distillery still in its first generation, bottlings like this show how far Chichibu has come in a short time. At 57.4% it drinks well neat, with water settling the oak.
