Description
Chavy-Chouet, the Burgundy estate led by Romaric Chavy, makes this wine from Aligoté, the region's second white grape after Chardonnay, and farms its plots organically. Aligoté is prized for its high natural acidity and citrus, mineral character, and on the limestone and marl soils of the Côte it takes on a stony cut and a lean, fresh frame. The continental climate, with cool nights, keeps that acidity firm and the fruit tight. The wine is aged for around ten months in oak barrel; the oak is used for gentle texture and slow oxygen exchange rather than flavour, and lees contact over that time softens the sharper edges and adds a little mid-palate weight without turning the wine rich or overtly oaky. It is pale with green highlights. The nose is bright and citrus-led, with lemon and green apple over white flowers and a light stony note. The palate is dry, crisp and racy, the acidity to the fore, finishing clean and saline with just enough texture from the barrel to round it out. Serve well chilled at 8 to 10 degrees.
