Chavy-Chouet is a Burgundy estate led by Romaric Chavy, known for a precise, delicate hand shaped by an apprenticeship that began in childhood. La Taupe is a regional Bourgogne Rouge made from organically farmed Pinot Noir, and its low 12.5 per cent alcohol signals a fresh, early-drinking style rather than a heavy one. The fruit comes from limestone-rich soils on the Côte, where the cool continental climate and calcareous subsoil give bright acidity and a light, mineral structure. Ten months in barrel, mostly older wood, settles the wine through gentle oxygen exchange and adds texture without dominant oak. The colour is a light, luminous ruby. The nose is fresh and floral, with candied cherry, red currant, rose and a touch of woodland earth. The palate is light bodied and elegant, with juicy red fruit, fine tannin, crisp acidity and a clean, savoury finish. This is Pinot for the table rather than the cellar. Serve lightly cool at 14 to 15 degrees in a Burgundy glass. It suits roast poultry, duck and mushroom dishes.
