Chateau Tour Saint Christophe sits in Saint-Emilion, where this wine carries Grand Cru Classe status from Merlot and Cabernet Sauvignon. The estate is known for its terraced vineyards, a centuries old technique that builds stepped walls across steep slopes to work otherwise difficult ground. The underlying limestone and clay soils hold water through warm summers and lend the fruit a cool, mineral spine, while the south facing terraces secure full ripeness in the Merlot. After fermentation the wine spends fifteen months in oak barrels, where slow oxygen exchange softens the tannins, fixes colour and folds in spice and a fine grained structure. The result is deep ruby in the glass, with a nose of ripe plum, blackberry and cassis over cedar, dark chocolate and a savoury tobacco edge. The palate is full and structured, the Cabernet framing firm tannins around the plush Merlot fruit, closing long on liquorice and vanilla. At fifteen percent it carries real weight without heat. Serve at sixteen to eighteen degrees and decant an hour ahead; it suits roast and grilled red meats.
