    Château Sénéjac is a long established estate in the Haut-Médoc, on the left bank of Bordeaux. Its blend follows the Médoc template of Cabernet Sauvignon with Merlot, Cabernet Franc and Petit Verdot, planted on the gravel and clay soils that define the region. The free draining gravel reflects warmth and stresses the vines, ripening Cabernet steadily, while the maritime climate keeps the fruit fresh and the tannins firm. The wine ages fifteen months in oak barrels, where slow oxygen exchange polishes the tannins and adds cedar and gentle spice without covering the fruit. The result is concentrated and savoury in the classic Médoc style. Expect a deep red, a nose of ripe red and black fruits with mineral, earthy and tobacco notes, and a palate that is smooth, velvety and succulent, medium to full bodied with a fine tannic frame and a long finish. Serve at 16 to 18 degrees and decant for an hour while young. It is a natural partner for roast red meats, game and mature cheeses.
