Description
Chateau Roc de Cambes sits east of the town of Bourg in Bordeaux, on a natural hillside amphitheatre of clay and limestone overlooking the Dordogne, under the AOP Cotes de Bourg. The wine is a Bordeaux blend led by Merlot with Cabernet Sauvignon and Cabernet Franc, the river-tempered, south-facing slope ripening the fruit while the limestone holds freshness and lends the wines their structure and length. Merlot brings flesh and plum on the cooler clay, the Cabernets add backbone and a leafy, cedary lift. The wine is raised twelve months in French oak, where slow oxygen exchange through the barrel softens the tannin and adds cedar and cocoa, while malolactic fermentation rounds the acidity into a supple frame. The colour is deep ruby. The nose is classically Bordeaux, with ripe cherry and plum, redcurrant, tobacco leaf, cocoa and a turn of earth. The palate is medium to full bodied, with fine, ripe tannin, fresh acidity and a long, savoury finish at a moderate thirteen and a half per cent. Decant an hour ahead and serve at 17 degrees. It is built for roast lamb and beef.
