Château Pavie Macquin is a red from AOC Saint-Émilion in Bordeaux, classified Premier Grand Cru Classé B, founded in the 19th century by Albert Macquin, a viticulturist who pioneered the fight against phylloxera and helped rebuild the Saint-Émilion vineyards. The wine is Merlot-led, blended with Cabernet Franc and Cabernet Sauvignon, and farmed under respectful agriculture. The estate sits on the limestone plateau at the top of Saint-Émilion, where the clay-limestone soils and free-draining slopes give the wines structure, freshness and depth. The limestone bedrock holds moisture and keeps acidity firm through warm summers, while the Cabernet Franc adds aromatic lift and the Cabernet Sauvignon backbone. Sixteen months in French oak barrels of 225 litres frame the fruit with fine spice and rounded tannin through slow oxygen exchange. The wine is deep ruby, with a nose of raspberry, plum and dark cherry over tobacco, cedar and a stony minerality. The palate is full and firmly structured, with concentrated fruit, pepper and a long, savoury finish carried by ripe tannin. Serve at 17 to 18 degrees and decant ahead. It suits roast red meats and game.
