Description
Arômes de Pavie is the second wine of Château Pavie, the Saint-Émilion estate ranked 1er Grand Cru Classé A on the right bank of Bordeaux in south-west France. It blends Merlot with Cabernet Franc grown on the appellation's clay over limestone, soils that hold water through the warm summers and lend the wine its breadth and savoury depth. Merlot ripens early here and brings plum and rounded texture, while Cabernet Franc adds red fruit, structure and a leafy aromatic lift. After fermentation the wine spends 24 months in oak barrels, where slow oxygen exchange through the staves softens and binds the tannins and folds in cocoa, cedar and vanilla. Farming is sustainable. The colour is deep ruby tending to purple. The nose carries blue and black fruit, tobacco and earth, with sweet spice from the wood. The palate is full and firmly structured, the limestone showing as freshness that keeps the ripe fruit in line, closing long and savoury. Decant an hour ahead and serve at 17 to 18 degrees in a large Bordeaux glass. It suits roast beef, rack of lamb and game.
