Château Pavie is a Premier Grand Cru Classé estate in Saint-Émilion, on the right bank of Bordeaux, named after the peach orchards that once grew there and run since 1998 by the Perse family. The blend is led by Merlot with Cabernet Franc and Cabernet Sauvignon. The vineyard lies on a south-facing slope of limestone and clay, where the limestone bedrock holds water through dry summers and reflects warmth, ripening the fruit fully while keeping freshness, and Merlot thrives on the cooler clay. The wine ages twenty-four months in 225-litre French oak barrels, a long elevage that builds structure, integrates the tannin and adds spice through slow oxygen exchange. The colour is deep, dense ruby. The nose is powerful and ripe, with black plum and dark berry over tobacco, sweet oak and dark chocolate, with an earthy mineral base. The palate is full-bodied and firmly structured, with abundant, fine-grained tannin, concentrated fruit and a long finish marked by liquorice and toasted oak. This is a wine for the cellar. Serve at 17 to 18 degrees and decant well ahead. Match it with roast and grilled red meat.
