    Château Haut-Bergey sits in Pessac-Léognan in the Graves of Bordeaux, an estate founded in the 15th century and now farmed biodynamically under Sylviane Garcin. The blend leads with Cabernet Sauvignon alongside Merlot and Petit Verdot. The Graves gravel soils drain freely and hold warmth, helping Cabernet Sauvignon ripen its thick skins fully and giving the wine its fine tannin and the smoky, graphite character of the appellation. The maritime climate is moderated by the Atlantic and the river for a long, even season, while biodynamic farming keeps the vines balanced and the fruit fresh. The colour is deep, concentrated ruby. The nose is lively and fresh, with peony and violet over liquorice and a clear graphite, mineral note. The palate is structured and succulent, medium bodied, with fine tannin, bright acidity and an earthy finish that holds the fruit in line. Serve at 17 to 18 degrees, and decant an hour ahead while the wine is young. It is a natural match for roast lamb and game.
