Château Haut-Bages-Libéral is a classed growth on the gravel of the Bages plateau in Pauillac. Farmed organically and biodynamically, this Cabernet led blend ages sixteen months in barrel, showing cassis, dark cherry, cedar and a graphite edge.
Description
Château Haut-Bages-Libéral sits on the Bages plateau in Pauillac, the same gravel ridge that is home to several of the appellation's first growths. The deep gravel soils drain freely and warm quickly, pushing Cabernet Sauvignon to full ripeness, while the moderating influence of the Gironde estuary lengthens the season. The estate is farmed organically and biodynamically, and the wine is a Cabernet Sauvignon led blend rounded out with Merlot, Cabernet Franc and Petit Verdot. It ages sixteen months in barrel, where slow oxygen exchange knits the tannins and adds cedar and fine spice, with the high proportion of Cabernet giving structure and length. Expect a deep red, a nose of blackcurrant, dark cherry and ripe plum framed by tobacco, cedar and the graphite minerality typical of Pauillac gravel, and a firm, structured palate with fine grained tannins built for ageing. Serve at 16 to 18 degrees and decant a young vintage for an hour. This is a wine for roast and grilled red meats and mature hard cheeses.
