Description
Château des Ferrages lies in Pourcieux, a Provence village between Aix-en-Provence and Saint-Maximin, at the foot of the Aurélien and Sainte-Victoire mountains where some of the best plots of the Côtes de Provence AOC are found. The estate works biodynamically and the project has drawn the involvement of Michel Chapoutier. The blend of Grenache, Syrah and the white Vermentino reflects the modern Provence move toward pale, fruity and juicy rosés. The limestone slopes and altitude below Sainte-Victoire, combined with warm Mediterranean days and cooler nights, ripen the fruit while keeping acidity fresh. The grapes are pressed gently and fermented cold in stainless steel, limiting skin contact to keep the colour pale and protecting the delicate aromatics from oxidation. The wine pours a pale pink. The nose shows ripe white peach and melon with red berries and a citrus edge over white flowers. The palate is dry and juicy, with fresh acidity carrying the fruit to a clean, lightly saline finish. Serve chilled at 8 to 10 degrees. It works as an aperitif and partners shellfish, white fish, salads and fresh goat cheese.
