Mathilde Chapoutier brought Chateau des Ferrages in the Cotes de Provence Sainte Victoire back into shape. This Grenache, Syrah and Vermentino rosé is farmed biodynamically and aged on its lees, giving a pale, dry wine with peach, red berry and a textured, saline finish.

Description
Chateau des Ferrages sits in Pourcieux in the Cotes de Provence Sainte Victoire, the named sub-zone beneath the Sainte Victoire mountain, and was restored by Mathilde Chapoutier around its 28 hectares of recovered vineyards. The wine is farmed biodynamically and blends Grenache and Syrah with Vermentino, here called Rolle, the white grape that lifts Provence rosé. This is the classic pale, dry Provence style. The Sainte Victoire zone is hot and dry but tempered by altitude and the mistral wind, which keeps the vines healthy and the nights cool enough to hold acidity, while the limestone and clay soils give freshness and a mineral spine. The rosé is made by direct press for a pale colour, then aged on its fine lees. Lees ageing means the wine rests on the spent yeast cells, which break down slowly and release mannoproteins that add weight, a creamy texture and savoury depth without oak. Expect a pale pink and a nose of white peach, red berries and melon with citrus, white flowers and a herbal garrigue lift. The palate is dry, fresh and textured, with a saline mineral finish. Serve well chilled at 8 to 10 degrees.
