Description
Chateau de Beaucastel is one of the leading estates of Chateauneuf du Pape, in the southern Rhone, and its white is built mainly on Roussanne and Clairette with other permitted white varieties. The vineyards sit on the appellation's stony galets and sandy clay soils, farmed with respect for the land. The large rounded stones store the day's heat and release it overnight, driving full ripeness, while sea breezes and cool nights hold on to freshness in a warm climate. Fermentation and eight months of ageing are split between stainless steel and barrel. The steel portion keeps the fruit fresh and precise, while time in oak on the lees adds texture, a nutty depth and a slow feed of oxygen that rounds the wine without heavy oak flavour. The colour is a bright pale gold. The nose shows white peach, pear, fennel, white flowers and a touch of honey. The palate is broad and textured yet dry and lively, with a saline, stony finish. Serve at 11 to 12 degrees in a large glass.

The weight and texture suit roast chicken, guinea fowl and richer fish such as monkfish or turbot in butter. It also works with roasted root vegetables and creamy, nutty cheeses.
