Description
Château d'Astros is a historic estate in Provence that farms by biodynamic principles, timing vineyard work to the phases of the moon and the rhythm of the sun. The wine is built from Grenache and Syrah grown in the warm dry climate of the southeast, where the Mistral cools the summers and holds acidity in the fruit. The grapes are pressed gently with little skin contact to keep the colour pale and the tannins light, and the wine is aged four months in stainless steel, which preserves the fresh primary aromatics rather than adding oak character. Organic farming and the absence of synthetic inputs keep the focus on clean fruit and the chalky clay soils of the estate. The colour is a pale salmon pink. The nose shows fresh strawberry and white peach with a citrus and floral lift. The palate is dry and light, with redcurrant and melon framed by bright acidity, finishing clean and faintly saline. Serve at 8 to 10 degrees as an aperitif or with light summer dishes.
