Description
Chateau Coutet is a Premier Cru Classe of 1855 in Barsac, an enclave within the AOC Sauternes that produces a slightly fresher, more mineral style of sweet wine. The estate works Semillon, Sauvignon Blanc and Muscadelle on the red sand and limestone soils of the Barsac plateau, with farming carried out under respectful, sustainable practice. The cool autumn mists drawn off the river Ciron settle over the vines on certain mornings, then burn off under afternoon sun, the cycle that encourages Botrytis cinerea. This noble rot perforates the grape skins, evaporates water and concentrates the sugars and acids while creating the apricot and saffron compounds typical of the style. The shrivelled berries are picked selectively across several passes, then fermented and aged for around 18 months in oak barrels, where lees contact and gentle oxygen exchange add almond and vanilla and build the texture. The colour is bright gold. The nose unveils fresh quince, ripe apricot and candied mango, with citrus peel lifting the bouquet. The palate is sweet and concentrated but carried by Barsac's bright acidity, finishing long and marmalade tinged. Serve at 8 to 10C in a small white wine glass, with blue cheese or a fruit tart.
