The second wine of Chateau Cos d’Estournel, Les Pagodes de Cos is a Saint-Estephe red led by Merlot and Cabernet Sauvignon. Aged twelve months in French oak, it shows deep black fruit, cocoa and cedar over a polished, structured palate.
Description
Les Pagodes de Cos is the second wine of Chateau Cos d'Estournel, one of the leading estates of Saint-Estephe in the northern Medoc. The Bordeaux blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot grows on the appellation's gravel ridges over clay and limestone, where the deep gravel drains well and the underlying clay holds water, giving the Merlot weight and the Cabernet firm structure. The estate farms sustainably. Fermentation is followed by twelve months in French oak barrels of 225 litres, where slow oxygen exchange through the staves softens the tannins and adds cedar, vanilla and cocoa to the fruit. The wine is deep ruby, with a nose of blackberry, cassis and dark cherry framed by tobacco, sweet spice and toasted oak. The palate is structured and polished, with fine-grained tannins, savoury black fruit and a long, cedar-edged finish that reflects the cooler, later-ripening character of Saint-Estephe. Serve at 16 to 18 degrees and decant an hour ahead. It is built for roast lamb, rib of beef and game.
