Description
Château Cos d'Estournel is one of the great names of Saint-Estèphe in the Médoc, its name drawn from the old Gascon for hill of pebbles. That gravel and pebble terroir drains freely and holds warmth, regulating water supply to the vine and lending the fruit a firm mineral base. The white is a blend of Sauvignon Blanc and Semillon: Sauvignon brings citrus lift and acidity, while Semillon adds weight, texture and a waxy depth that carries the oak. It is aged nine months in 225 litre French oak barrels. Fermentation and ageing on the fine lees in barrel drive the style, as lees autolysis releases mannoproteins for a creamy texture and the oak contributes toast and spice with slow, stabilising oxygen exchange. It is bright gold in the glass. The nose leads with lemon and white peach over pear, beeswax and toasted bread, lifted by white flowers. The palate is rich and precise, dry, with a long saline finish. Serve at 10 to 12 degrees in a large white glass.
