Description
Château Cambon works in the natural wine tradition that Jules Chauvet inspired and Marcel Lapierre carried forward in Beaujolais, farming Gamay with minimal intervention. The fruit comes from the granite soils of the Beaujolais, where the poor, free draining ground and a temperate climate give bright red fruit and fine tannin. The wine is made in the region's semi carbonic style, with whole bunches fermenting on native yeasts so that colour and aroma come from the intact berries while tannins stay light. In keeping with the natural approach, additions are kept to a minimum and sulphur is used sparingly, which gives the wine its vivid, direct fruit and freshness. At 12 per cent alcohol this is a light bodied, energetic red, with raspberry and cherry, a floral rose note, a little plum and a savoury, earthy edge. The palate is juicy and fresh, the tannins soft, the finish clean and lively. Serve lightly cool at 13 to 14 degrees. It is a natural fit for charcuterie, roast pork and poultry.
