Description
This is the regional Burgundy of Domaine Philippe Charlopin-Parizot, drawn from vineyards across the Cote d'Or in central-eastern France. Charlopin was one of the promoters of the Bourgogne Cote d'Or appellation, which covers the better regional sites along the famous slope, on limestone and marl soils that give Pinot Noir its clarity and lift. The domaine farms biodynamically, working the vines with a focus on healthy fruit and clean expression. Even at this level, Charlopin applies his ripe, careful approach, ageing the wine in oak barrel so that gentle oxidation softens the tannins and adds a light savoury frame without heavy woodspice. The result is a red that shows the character of the Cote d'Or in a more open, early-drinking form. The colour is bright ruby. The nose offers red cherry, redcurrant and rose, with a touch of earth. The palate is medium bodied, fresh and savoury, with juicy red fruit, fine tannins and good acidity. Serve at sixteen degrees, in a Burgundy glass. It is a flexible wine for roast poultry, pork and mushroom dishes.
