Charles Joguet makes this biodynamic Chenin Blanc in Chinon, on the Loire. Kept in stainless steel for four months with no oak, it is dry and taut, with green apple, pear and a stony freshness carried by firm acidity.

Description
Charles Joguet built his reputation in Chinon, in the Loire, and this cuvée is a Chenin Blanc from the appellation, farmed biodynamically. Chinon's mix of gravel, sand and limestone-clay soils shapes the wine, with the limestone in particular giving Chenin its high acidity and mineral length, while the cool Loire climate and the moderating rivers slow ripening and hold the fruit fresh. Biodynamic farming works the vineyard as a whole system, without synthetic inputs, to support soil life and vine balance. The wine is made and aged entirely in stainless steel for around four months, with no oak, a reductive approach that locks in primary fruit and preserves the grape's naturally bright acidity, giving a clean, precise style rather than a rich or honeyed one. At 14 per cent it carries a little more weight from a ripe vintage, but the freshness holds it in balance. The wine is pale with green tints. The nose is aromatic, with green apple, pear and white peach lifted by white flowers. The palate is dry and taut, the acidity firm, the body fuller than the aromatics suggest, finishing long and stony with the faint honeyed note typical of dry Chenin. Serve at 9 to 11 degrees.

Serve with grilled white fish, prawns and oysters, where the firm acidity acts like a squeeze of lemon. The apple and pear fruit also suits roast chicken and cold hams, and the dry, mineral style pairs cleanly with fresh goats' cheese.
