Description
Chapuis & Chapuis is the partnership of brothers Romain and Jean-Guillaume, working in the Côte de Beaune of Burgundy after years gathering experience abroad and alongside the natural winemaker Philippe Pacalet. This is their Corton Rouge from the grand cru hill, made from Pinot Noir farmed organically with a natural approach in the cellar. The Corton slope is built on limestone and marl streaked with iron rich clay, soils that give the grape its red fruit and earthy depth, while the cool 2022 fruit came in at a restrained 12.5 percent. Pinot Noir is thin skinned and lightly pigmented, so colour and tannin come from gentle handling, and the wine ages fifteen months in oak barrels, where slow oxygen exchange rounds the structure and adds a measured spice. The colour is deep red, the nose showing cherry and raspberry over rose, damp earth and a subtle oak frame of vanilla. The palate is medium bodied and silky, with bright acidity, fine tannin and a long, savoury finish. Serve at 16 degrees in a large bowled glass, decanted briefly. It pairs with roast duck, game birds and mushroom dishes.
