Description
Champagne Lallier are based at Ay and specialise in wines from the finest cru villages. This Blanc de Blancs is made entirely from Chardonnay sourced from grand cru vineyards, the top tier of the Champagne classification. As a Blanc de Blancs it is a wine of white grapes only, prized for finesse and a mineral, chalky line. It is made by the traditional method, with the second fermentation in bottle and an extended rest on the lees that builds the biscuity, autolytic depth, and it is finished at brut dosage.
The colour is a pale gold with a very fine, persistent bead. The nose is precise and citrus-led, showing green apple, lemon and white flowers over toasted bread and biscuit. The palate is dry, taut and mineral, the fruit carried by a fine mousse and a saline, chalky finish that runs long. Serve at around eight to ten degrees in a white-wine glass so the aromatics show. It makes a fine aperitif and pairs with oysters, shellfish and delicate white fish.
