Chalong Bay distils fresh sugar cane juice on pot stills in Phuket, working in an agricole leaning style unusual for Thailand, and this expression takes that base spirit and infuses it with cinnamon. The result keeps the grassy, vegetal freshness of cane juice distillation while layering a warm baking spice over the top, with cinnamon showing on the nose alongside a fresh, faintly schnapps like fruitiness.
The palate is fresh and surprisingly balanced for an infused rum, the agricole character still legible underneath the spice, and the cinnamon carrying cleanly through the finish. It is a flavoured rum and reads as one, but the cane juice foundation gives it more vegetal backbone than most spiced bottlings built on neutral molasses.
